Funnel Cake Fries


2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1/4 cup white sugar
1/2 cup milk
1 tsp vanilla
3-4 cups canola or vegetable oil
1 jar marshmallow creme or marshmallow fluff

1. Whisk flour, baking powder, and salt in a bowl. Set aside.
2. With a mixer, beat eggs, sugar, milk and vanilla in a large bowl until foamy and well combined. Carefully add in the flour mixture and mix until you have a smooth, thick batter. Place the batter in a bag or bottle for piping.
3. Add about 1 inch of oil to a large pot with high sides. Heat the oil to 350 degrees F. Pipe the batter in long straight lines into oil and fry until golden, about 30-60 seconds per side. Remove to a plate and serve with powdered sugar while still hot.
Marshmallow Fluff Dip: Place marshmallow creme in a bowl for dipping and warm in the microwave for 15-20 seconds. Stir until smooth and serve with funnel cake fries.
To Reheat: Preheat oven to 450 degrees F. Place funnel cake fries on a baking sheet and bake at 450 for 3 minutes.

Almond Joy Cookies


How can you go wrong with Chocolate and Coconut?

Ingredients
1 cup butter
1 1/2 cups white sugar
1 1/2 cups brown sugar
4 eggs
3 teaspoons vanilla
4 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt
5 cups chocolate chips
2 cups sweetened coconut
2 cups chopped almonds

Directions
Pre-heat oven to 375°F Lightly grease cookie sheets.
Combine dry ingredients, set aside.
In a large bowl, cream the butter and sugars together. Beat in the eggs, one at a time, stir in the vanilla. Stir in the dry ingredients until well mixed then stir in the chocolate chips, coconut and almonds. Drop by rounded tablespoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes. Cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Bacon Wrapped Cheese Stuffed Meatballs



1 packages bacon
1 favorite bbq sauce
1 lb ground beef
1 egg
totaste favorite dry rub/salt and pepper you flavor your meatball
1 breadcrumbs or crackers of choice
1 favorite cheese cut in cubes
1/2 onion minced
1 clove garlic minced

30 minutes
Mix all ingredients till smooth texture.
∙1 lbground beef
∙1 egg
∙totastefavorite dry rub/salt and pepper you flavor your meatball
∙1 breadcrumbs or crackers of choice
∙1/2 onion minced
∙1 clovegarlic minced

Flatten nice amount of mixture in Palm of hand

Add cheese to center and make into meatball by rolling in palms of your hands.

Wrap each ball with 1slice of bacon.

Place on grill indirect cooking method, or in oven at 350 and cook about 45-60min.

For the last 10-15 min cover with your favorite sauce
∙1 favorite bbq sauce

Remove from grill or oven and let rest for 5-10 min
